Sweet Potato Pie

Tired of the usual Pumpkin Pie?

Try this.... Good Luck with the recipes.

Sweet Potato Pie
2 medium large sweet potatoes (or 2 12- to- 14 oz. cans)
2 egg whites
1/2 cup sugar
1 cup brown sugar
1/2 cup orange juice (fresh squeezed if possible)
1 tsp. vanilla
1 1/2 tsp. nutmeg (or cinnamon)
1/2 orange rind for zest
9 to 10 inch pie shell

Boil sweet potatoes until soft; peel and mash with hand mixer on low to medium speed.Mix egg whites and sugar and beat by hand until peaks are high.To potatoes, add beaten eggs , brown sugar, orange juice, vanilla, nutmeg and orange zest.Mix until very smooth with hand mixer, pour into pie shell.Bake at 375 F. for one hour. or until set in the center ( as you would with a pumpkin pie.)Serves 6 - 8

Aunt Becky's Lasagna

Sauce (use your favorite - you need enough for 3 layers and the top)

Cheese mixture per batch:

1 lb mozzarella
1 small container cottage cheese (can be substituted for ricotta)
1 handful mild cheddar

Layer

Bottom - sauce
Noodles
1/3 cheese mixture

Repeat the layers twice

Top with a layer of sauce, then shredded cheddar

Bake at 350 for at least 30 minutes - s/b bubbling in the middle when heated all the way through.

Pineapple Chicken Pasta Salad

This is one of my favorite pasta salads. I have such good memories of making it with friends and family. I encourage everyone to give it a try. ASAP. It helps that it super easy.

1 box tri-colored rotini pasta (cooked)
1 c mayo
1/2 mustard
2 cups shredded chicken
1-8oz can of crushed pineapple
1 T of cinnamon
dash of salt
dash of pepper

Combine all ingredients, mix well, chill and enjoy.

Very simple! :)

Artichoke Spinach Dip

This is by far the best recipe for artichoke spinach dip! I have never had more compliments then when I make this dip for dinner parties or in some cases...dinner.


1 - 8 oz cream cheese
1 cup of mayo
1 cup of sour cream
1 can of artichokes (chopped)
1 can of water chestnuts (chopped)
1 packet of veggie dip seasoning mix
1 bag of frozen spinach (defrost and drain)
1 cup of shredded asiago, swiss, or even cheddar cheese
1 cup of shredded parmesan cheese

Mix all ingredients together, put into a 8x8 (or similar) glass dish.
Bake at 350 degrees for 25 - 30 mins. Until the top is golden brown.
Serve with chips or crackers

Asian Lettuce Wraps

Olive Oil
1 small onion (chopped)
3 cloves of garlic (chopped)
4 poached chicken breasts (chopped)
Carrots and mushrooms (chopped)
1/2-3/4 c sesame oil
Teriyaki sauce
3-4 green onions (chopped)
2 T sesame seeds
2 packages of ramen noodles (crushed and fried)
Head of lettuce

Cover bottom of the pan with olive oil, add chopped onions and garlic. Fry on med heat. Add poached chicken, chopped carrots and mushrooms. add sesame oil and stir fry. Add soy sauce and teriyaki sauce (sprinkle liberally) add green onions, sesame seeds and ramen noodles. Remove from pan wrap in lettuce and serve
*add sweet chili sauce to chicken for spice


Veggie Dip

1 - 8 oz cream cheese
1 - 6 oz can of V - 8
1 packet os good seasons italian dressings mix

Add v -8 to cream cheese until "dip" consistency.
Add mix and beat well
Chill

Shrimp "Pou Pou"

1 - 8oz cream cheese
1/2 cup of mayo
Dash of worcestershire
Dash of curry powder
Can of tiny shrimps
Finely chopped onions
1 grated hard boiled egg

Mix the top 4 ingredients layer on bottom of the plate
layer following ingredients individually on top

Monkey Bread

1/3 cup of sugar
1 tsp cinnamon
4 cans of cheap biscuits (cut each biscuit into 4ths)
Roll each 1/4 biscuit in cinnamon and sugar place in greased pan (either bunt or 9x13)

Boil together until thick
2/3 cup brown sugar
1/2 cup of white sugar
3/4 cup of margarine or butter
Pour over top of biscuits

Bake 350 degrees for 25 to 30 mins
*Sprinkle with nuts before baking if desired


Vodka Slush

3 1/2 cup vodka (or Gin or Rum)
2 cup boiling Water
7 cup water
1 - 12oz can frozen lemonade
1 - 12oz can of orange juice
1 1/2 cup of sugar

Dissolve sugar in water. Mix other ingredients and freeze. (Makes 1 gallon)
5qt pail works perfect.

Once frozen, put into a rocks glass, add sprite, relax, enjoy and cool off.

This blog was created for those who love food and who love to cook. I started this blog with the hope it would catch on like wildfire, but of course like so many other things...it didn't.

I am hoping with the start of these recipes that we are sharing today, it will only bring many many more.
